Choose countryThe KAI Shun Premier Tim Mälzer set pairs the TDM-1701 utility knife with the TDM-1702 Santoku knife in a wooden box. Both are designed for fine, controlled cuts in everyday kitchen work.
Blade construction and handling
A VG-MAX steel core wrapped in 32 layers of Damascus steel combines hardness with elasticity. The lightweight, balanced blades have a double-bevel grind, while the hammered surface creates small air pockets that help food release from the blade.
- Blade lengths: 16.5 and 18 cm.
- Symmetrical wooden handles: suitable for left- and right-handed users.
- Full tang construction: provides stability and balance during cutting.
- Distinctive detail: the handle ends feature the engraved Tim Mälzer bull’s head.
Care and storage
Do not put the knives in a dishwasher or leave them in water. Clean with a damp cloth after use, especially after cutting acidic foods, and avoid corrosive or abrasive cleaners. Stone and ceramic cutting boards damage and dull the blades. Do not store knives loose in drawers; use a knife block, magnetic holder, drawer insert or blade protectors. For transport, use a knife case, knife bag or blade protectors.
