The blade is 2.5 mm thick with a hardness of 56–57 HRC. The wooden handle means the knife must not be left in water or cleaned in a dishwasher. Clean it with a damp cloth after use, especially after cutting acidic foods, and avoid corrosive or abrasive cleaning agents.
