The KAI Shun Classic DM-0728 is a Japanese Nakiri vegetable knife with a 16.5 cm blade for slicing, chopping and peeling vegetables, herbs and fruit. Its double-bevel edge supports precise, controlled cuts.
A VG-MAX steel core is surrounded by 32 layers of Damascus steel, with a blade hardness of 61 HRC. Forged construction and a full tang provide stability and balanced handling. The ergonomic, chestnut-shaped Pakka wood handle offers a comfortable grip during longer preparation tasks.
Do not clean the knife in a dishwasher or leave it in water. Clean it after use, especially after contact with acidic foods, and avoid corrosive or abrasive cleaners. Stone and ceramic cutting boards damage and dull the blade. Store the knife in a knife block, on a magnetic holder or with a blade protector rather than loose in a drawer.
