The blades have a hardness of 59 HRC after heat treatment and feature an engraved Berkel logo. The handles are made from acetal resin with steel bolts.
Care and storage
These knives are not dishwasher safe. Hand washing in hot water is recommended, without abrasive sponges or abrasive or corrosive cleaning agents. Wipe the knives with a damp cloth immediately after use, particularly after handling acidic foods.
Stone and ceramic cutting boards damage and dull the blades. Do not store the knives loose in a drawer; use a knife block, magnetic holder, drawer insert or blade guards. For transport, use a knife case, knife bag or blade protectors.
